Summer Reading for Children

I am down a pound from last week. I have 25 more pounds until I reach my "wedding" goal.
Now that it is finally spring I am more motivated to eating heathier. I made a tomato, cucumber and onion salad with a spinkle of Italian Dressing. It is so yummy even Hannah loves it!
I also chopped up some strawberries and munch on them when I need a snack.
From this day on I will have a "cheat" day on Sunday.
This has all been mental to me, which, I think I am over now! I know what I need to do and will make it work for me!
If you have any words of wisdom I would LOVE to hear it! Also if you have any exercise routines that I can do with Hannah at home let me know about that!

Recipe
Creamy Dulce de Leche Pie (I named it Creamy Candy Bar Pie!)
1 Honey Maid Graham Pie Crust (6 oz)
1/2 cup Planters Pecan Pieces, divided
1 pkg. (8 oz) Philadelphia Cream Cheese, softened
1 tub (8 oz) Cool Whip Whipped Topping, thawed, divided
1 chocolate-covered English toffee bar (1.4 oz) chopped
1/2 tsp unsweetened cocoa powder
Spread 3 Tbsp of the carmel topping onto bottom of the crust; sprinkle with 1/3 cup of the pecans.
Mix cream cheese and 1/2 cup of the remaining carmel topping until well blended. Stir in 2 cups of the whipped topping and the chopped candy. Spoon into crust.
Top with remaining whipped topping and pecans. Sift cocoa powder over top. Drizzle with remaining carmel topping. Refridgerate at least 1 hour before serving. Store leftovers in refrigerator.
Makes 8 servings, 1 piece each

Fancy Feast Sunday
Danielle also made a pasta salad with Bacon Bacon from her Tastefully Simple collection. She added peas and some cheese with Ranch dressing, this was a BIG hit, even with the picky eaters!
I subsituted Strawberry pie filling for Blueberry, for the picky eaters. These little tarts were the hit of the night! One batch made 24 tarts! I may consider making these for the dessert bar for the wedding if we are allowed to make some stuff on our own. I have to ask permission from the caterer!

Recipes - new to me!
Ingredients
1 tablespoon paprika
1 1/2 teaspoons dark brown sugar
1 1/2 teaspoons finely grated orange zest
1 1/4 teaspoons salt
3/4 teaspoon ground cumin
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper, to taste
4 pounds baby back ribs, cut into 2-rib portions
In a small bowl, stir together all ingredients except the ribs. Rub spice mixture all over the ribs. Cover with plastic wrap and refrigerate ribs for at least 2 hours or up to 12 hours.
Preheat the grill to medium heat.
Arrange the ribs on the barbeque and grill for 40 to 45 minutes, turning with tongs occasionally until meat is tender and crisp on the outside.
Ingredients
2 (8-ounce) packages cream cheese, softened
1 cup sugar
1 teaspoon pure vanilla extract
2 eggs
12 vanilla wafers
1 (21-ounce) can blueberry filling, or other pie filling
Directions
Preheat oven to 350 degrees F. Place a paper cupcake liner in each cup of a muffin pan.
Beat cream cheese with a handheld electric mixer until fluffy. Add sugar and vanilla, beating well. Add eggs, 1 at a time, beating well after each addition. Place a vanilla wafer, flat side down, in each muffin cup. Spoon cream cheese mixture over wafers. Bake for 20 minutes. Allow tarts to cool completely. Serve with blueberry filling on top, or pie filling of your choice.

I saw a story on the news last night saying there are 850 children in foster care now and only 200 foster families. These are desperate times and we need to help in anyway we can. The Clermont County Foster Program is looking to start a library. So I am looking for BOOKS! The CCFP needs books for children and teens available when they are waiting in the lobby, visiting their parents during supervised visits, etc as well as books on parenting that parents have had their children removed from them or are at risk of this could borrow.
The second is a place I found is Inter Parish Ministry in Newtown who is helping folks who have lost their jobs and can't afford anything. These individuals are referred by social workers and will receive toiletries, baby food, clothing, boxed/canned goods, etc. This is their critical needs: Canned Pasta in Sauce (ie. Ravioli), Peanut Butter (crunchy), Jelly (all flavors), Pasta & Spaghetti Sauce, Cereal (cold, all types), Shampoo / Conditioner, Deodorant, Toilet Paper/Paper Towels.
I am sure us coupon queens can get a lot for FREE!
Donations will be taken now until April 19. You can donate items personally April 19 at the Milford Quaker Steak and Lube from 12-4. I am part of "Wicked Women Racing" and we give back to the community everytime we get together.

Free Treatment for Unemployed at WalGreens
Walgreens said patients who lose their job and health insurance after March 31 will be able to get free treatment at its in-store Take Care clinics for respiratory problems, allergies, infections and skin conditions, among other ailments.
